Harbour's Edge White Caps

If you’re ever in the beautiful harbour community of Hope Town, a visit to the Harbour’s Edge Restaurant and Bar is a must.  The refreshing open-air environment nicely compliments Chef Arnold Hall’s culinary offerings.  One of our favorites was the appetizer “White Caps.”  

 

 

White Caps

(Grouper Nantua)

From Chef Arnold Hall

Harbour’s Edge Restaurant and Bar

Hope Town, Abaco, Bahamas

 

Fish filet (deboned and flaked) – preferably Grouper, but other white meaty fish will do

Chopped celery

Chopped sweet, green pepper

Salt, white or black pepper

Lime juice

Mayonnaise

 

Mix all of the ingredients to desired taste and texture.  Spread on triangles of bread.  Top with freshly grated Parmesan Cheese.  Toast in oven until golden.
